Lentil and Peanut Layer

Another in my very irregular recipes series…
Apologies for my scuzzy kitchen. If anyone knows how to use their kitchen for real cooking and not have it look like a bomb hit the place, please let me know your secret!
Here’s what I did…
Heated 2 tablespoons of Sesame oil in a large saucepan. Fried 1 chopped onion for about five minutes. Then I added 2 chopped celery sticks and 2 diced carrots and cooked for another two minutes. Then I added 175g red lentils, 1 tablespoon of soy sauce and a teaspoon of dried oregano and mixed the ingredients together. I then stirred in 300ml water and added a vegetable stock cube, and added a can of chopped tomatoes. I brought the contents of the pan the boil and then left to simmer for about 20 minutes. Once the lentils were softened, I stirred in 100g chopped salted peanuts and then simmered the mixture for another five minutes.
While the mixture was simmering, I cleaned and sliced 5 medium sized potatoes and boiled them.
Once the lentil mixture was ready, I spread it into the botton of an oven proof dish and arranged the potatoes on top (see photo for example). I grated 50g stilton cheese and sprinkled on the top. You could vegan-ise it by leaving out the cheese.
I then put the dish under the hot grill for about five minutes until the cheese was bubbling and my creation was ready to serve. My omnivorous HTB loved it!
