I was quite pleased with this, it was surprisingly filling too. This made enough for two generous servings. Here’s what I did:
Heated some olive oil in a roasting dish, then sliced half a red pepper, half a green pepper and half an onion. Roasted these in the oven for about 20 minutes on gas mark 5 / 180C.
Sliced the ready made polenta and grilled it for about 5 minutes on each side.
Made a sauce from 100g silken tofu and the juice of half a lemon by whizzing in the blender.
To serve – arranged the polenta on a plate, topped with veg and sauce and sprinkled on black olives, sliced sun-dried tomatoes and some pine nuts .
